It’s surprising, even shocking, to discover that in our country we discard 40% of the food we produce. A lot of that waste takes place at home. We throw out leftovers, rotting food and edible food past the expiration date. Most of us think that we aren’t wasting food and that erroneous belief contributes to our wasteful behavior. Most households could save $1,500 or more by eliminating food waste. But how? It’s not as easy as saying “Don’t discard leftovers.” Marilyn Paul points to a constructive path to change that includes ways of organizing our kitchens and changing our attitudes towards getting food on the table in general.
